Rainbow carrot cake

Birthdays for kids can be healthy and yummy, check this recipe and you’ll see!

We wanted a “seasonal” cake for our daughter’s first birthday and of course a healthy one, so we decided to bake a delicious carrot cake, sugar free.

Ingredients for the cake
1 ripe banana
75g/6 tbsp of coconut oil
120g/1 cup whole wheat flour
2 tsp baking powder
4 tsp cinnamon
2 tsp nutmeg
1 tsp ginger
5 medium carrots (grated)
45g/ 1/2 cup desiccated coconut
a handful of walnuts ( chopped)
a handful of sultanas

How to:

Sift the flour, baking powder and spices into a bowl. Add the banana and the melted coconut oil and mix.
Whisk the eggs with a hand blender and add to the flour. Add the rest of the ingredients and stir until blended.
Bake it for 40-50 minutes until a toothpick comes out clean. Let the cake cool completely.

Icing : mascarpone, banana and whipped cream (whip the mix until thickened)

We decorated with sultanas and chopped walnuts making different bows with them. Ta-dah!

Hope you’ll like it, we really enjoyed it! The original recipe is from http://www.waffleandwhisk.com and I changed the icing because I wanted to avoid honey. Xx
